Though I have been struggling once again with the limited vegan meal choices and their respective nutritional components (or lack thereof), I came across an interesting combination for lunch today.I went through the menu from Buongiorno and the Provencal sandwich seemed to be the only vegan item. The sandwich is composed of thinly sliced aubergine, peppers, mushrooms, caramelised onions and carrots, mixed with sun-dried tomato spread.
When I came to order, I decided to turn the sandwich into a wrap, having it wrapped with whole-wheat tortilla bread.
The outcome was quite messy, but nevertheless vegan, nutritional and absolutely delish!!
